Okay, so I haven't logged in some time now!

I have been busy busy busy! Not by my choice. Pretty much because I HAVE to be right now, with school and goals.

I'm not one to enjoy time away from hubby. Honestly, it kills me. But then again, I'm passionate for what I do as well.

School has been great! Besides the 88 I made off an extremely hard exam today. I KNEW I was going to ACE it! I should have double-checked it! There were obvious wrong answers. Blah. Anyways... Other than that, work is amazing as well. Trying to get an entire list of procedures and prices down is rather complicated.

..I'm so tired.

My body is shutting down.
Hopefully I'll regain strength soon.

When it rains, it pours. And when it's cold, it hails.

I'm ready for this storm to end.
My tears alone, can create it's own ocean.
I pray these winds will soon die down.
The waves from my own ocean can destroy this town.

But as I lay and fall asleep tonight.
I'll dream of the beginning when that Northern star was so bright.

Vegan Red Chili Chicken Enchiladas

I LOVE this dish! It's one of our favorites!

Ingredients: All Organic

1/4 cup Flour
1/2 cup Red Chili Powder
3 cups Water
1 tsp Salt
1/8 tsp Ground Cumin
2 Tsp Canola Oil
1 bunch, Green Onions (sliced into 1/4 pieces)

1 Package Chicken (QUORN meatless, made of mushroom and tastes SO GOOD!)
1/2 tsp Light Soy Sauce
1 Package Corn/Wheat Tortillas
1/2 cup grated Soy Cheese (Jack Style)
Non-dairy Sour Cream
Canola Oil Cooking Spray

Cooking Directions:

Whisk Flour and Chili Powder into Water in a Heavy Saucepan, add Salt and Cumin Powder. Bring to a boil on Med-High heat, stirring occasionally.

Once the sauce boils, reduce heat to a simmer and cook for 3-4 minutes, stirring constantly to prevent sticking or burning. Set aside while you make the filling.

In a heavy, heat canola oil over Med heat. Add green onions and sautee' for 1 minute. Add chicken, salt, soy and cook for another 2-3 minutes.

Pre-heat oven to 350 degrees. Warm tortillas to soften. They can also be wrapped in a cloth and warmed.

Fill each tortilla with 1/2 cup filling and roll up from one side to another. Pleace seam side down on a 10 inch round baking dish coated with cooking spray. Once they are filled, pour sauce over rolled stuffed tortillas, and cover with aluminum foil.

Bake for 25 minutes. Remove foil, sprinkle with soy cheese and bake another 5 minutes.

Vegan Cream of Mushroom

Can't find a Cream of Mushroom substitute for those oh so good green bean casseroles and other yummy foods!? Well, here you go!

Ingredients: All organic

3/4 pound fresh Mushrooms, sliced
1/2 small Onion, diced
2 cloves Garlic, minced
1 tbsp Vegan Margarine (Earth Balance)
3 cups Vegetable Broth
2 tbsp Flour
1 cup Vegan Sour Cream Substitute
1 cup Soy milk
Salt and Pepper to taste


Preparation:

In a large soup or stock pot, sautee the mushrooms, onion and garlic in vegan margarine for 3-5 minutes, until onions are soft.

Reduce heat to medium-low and add the vegetable broth. Cover and allow to simmer for at least 45 minutes.

Add flour, non-dairy sour cream and soy milk, stirring well to combine. Allow to simmer another 20-30 minutes, or until soup has thickened. Season generously with salt and pepper before serving or preparing other dishes.

It may seem like alot, but I promise you, it all gets used very quickly! I know by experience! Oh how I love bein' Vegan!

Dillon got his report card in. I need my bumper sticker please! lol

I am proud to say that I am now the mother of an Honor Roll Student!

Last year was a hard year for that boy! He went through alot! Several people came in and out of his life, but this year, he little world is filled with people that love him.

That's all he needed.

What an improvement since last year!!! ...in EVERY way!

Closing This Chapter!

I have not ran in 2, I repeat TWO whole weeks!!! Although I still have managed to get my workouts in at the gym, it's driving me crazy.

As some of you know, I injured my leg (Tibialis posterior-the middle muscle in the calf) on December 18th. So I layed off of it for a week.

On Dec. 29th, my first day back to run... I did it again! So every since then, I have not ran. Plus, the injury took a dive. Because I've been walking differently "dodging my Tibialis" I've been putting more strain on my foot, which has caused my Abductor Hallucis Trans Head and the outer Abductor digiti minimi in the foot to inflame and cause much pain. Great!

On the flip side, I've been swimming... alot!!! As for working out, it's equivelant to running, but less strain on the body.

When I started swimming I could only swim one lap. Sheesh, for loving the water, I never thought it was such a workout! But I swam 30 LAPS freestyle and felt like I could still do more!
That's a 775 meter swim!

So I'm excited to say, that now because I have been obedient by staying off my leg/ankle/foot for a whole 2 weeks, I can tell it's finally getting better! But I'm not going to test it out...
