Vegan Stuffed Peppers

To the meat eaters who think that "soy junk" just doesn't cut it. You're in for a surprise. So, go on... make it. And after you consume every last drop,... then you can tell me I rock.


INGREDIENTS:

* 4 Large Bell Peppers
* 1 Package of "Beef" Crumbles (Quorn Brand)
* 1 Box of "Near East" Whole Grain Blends, (Roasted Garlic-A blend of Whole Grain Brown Rice, Bulgar & Quinoa), prepare as directed.
* 3/4 Cup of dairy-free Cheddar cheese, shredded
* 3/4 Cup of dairy-free Mozzarella cheese, shredded
* 1 Small Onion, diced
* 1 10 3/4 oz. of Organic Tomato Soup
* 1 8 oz. Tomato Sauce
* 1/4 Cup of Tofutti Cream Cheese
* 1/2 tsp. Pepper
* 1 heaping tsp. Salt
* 1 tbsp. Cayenne Pepper
* 1 tbsp. Chili Powder

Pre-heat oven to 350*

Prepare Rice/Quinoa first thing. This process takes aprox. 35 minutes, so during that time, you can be preparing everything else as follows.

Saute "Beef" and diced Onions. Gradually adding Cayenne Pepper & Chili Powder

In a Large Glass Bowl, Pour Tomato Soup & add the Tofutti Cream Cheese. Nuke for 1.5 minutes, then add Rice, "Beef" mix, Cheddar & Mozzarella, Salt & Pepper. Mix ingredients together.

Stuff Peppers.

Pour Equal amounts of Tomato Sauce on Each Pepper.

An 8x8 Cooking Dish would be perfect. (I don't have one so I used a Cake Pan)

Bake for 30 minutes.

Garnish & Serve. Enjoy!


***I took this picture BEFORE I poured the Tomato Sauce on them & before I baked them as well. So, if yours doesn't turn out looking like this after you followed all the directions, that is the reason why. You didn't do anything wrong.

Dallas Fort Worth has been really good to me for the last 24 years. And though I found what I'm called to go a couple of years ago, and have every opportunity in the world to move to LA, and as well have been offered to stay with a wonderful friend, the ONLY thing that holds me back... the ONLY thing that holds me back...

...is my church.

When you make a big move, you're supposed to feel at ease about the move. I forgot how my previous pastor once put it... but if you leave a place (ANY place) on bad terms, whether it be you thinking it was someone elses fault or your own, then that's not the right time to go.

Everything is so lovely right now. Family, friends, church, the weather is even not too shabby. lol. Flowers have blossomed even in the hail storm. Pretty strong soil & flower if you ask me.

For some teeny tiny reason though,... SOMETHING is not "finished" with me at my church. And I cannot leave. And constantly joining things probably isn't going to help. Or maybe that's what the plan is?

I'm beginning a Connections group at my house for single women only, beginning Jan 31. I'm very excited about it! Most of the women attending have been hurt by their previous loved one (husband). So we are all deeply connected. And as well deeply rooted in the truth and have an utmost passion for Christ! Most of us met in Divorce Care, another absolutely fantastic ministry. Ron and Glenda, I couldn't ask for better leaders and role models.

I had taken 3 entire 13-week sessions of DC, and now know in my heart without a doubt I'm ready to move onto something new, so last night was our first Choir meeting of the year. Choir is about to start up and I couldn't be more excited to be in this ministry as well! God is good.

So although things aren't done here, I will still someday have that opportunity again in LA. So in order of importance, Faith, Family & Work I'm absolutely clear on making this decision.

There are such things as plane travel and the stay can always be short term!

The future is a pretty amazing thing.

This is the Edge Service (3rd service), Andrew being in the middle. I plan on Dillon taking guitar lessons from him soon. Talented kid. Very amazing ministry! Totally amazing people!

I've been a bit side tracked lately so watching movies was probably my very least priority, but tonight I drove up to the Walgreen's Redbox, pressed button after button, I come across a movie that I've been wanting to see. "Julie and Julia".

When I got home, I have never been so impatient to play a movie, but I was clearly excited for some completely odd reason.

The movie began, and although there is already a connection that me and a character might have... our names, there are a few other things too. I LOVE to cook! And although I'm not called to do it for a career I know, I DO know I'm good at it.

But even aside from the cooking, there was a deeper message that reflected my heart. The PASSION, DEVOTION and TRUTH! It was such an inspirational story. Completely uplifting in every way. It makes you go wayyyyyy back in time, and think of all those silly little dreams that you once had made, that slowly lifted out of reach somewhere because your belief in yourself over time had deteriorated... somehow... reappears.

This girl Julie. Had a blog. Knowing that her goals may fail,... short term =) but keeping up at them, with pain, sweat and tears, will one day pay off.

I can say that I don't know why I waited so long to see this film, but one thing I do know is that God has a time and a place for every occasion.

I'm very happy everything in my life has happened the way things have happened. It may hurt every now and then, but there is always still another day, and another goal. ...But there is ALWAYS love =)

As you know, I have been dating these last few months. It has been a great journey. And I've got to experience some new amazing things.

Things are going very slow like they should go. Which I have loved every second. We've talked about things from the beginning which should be talked about. Hopes, dreams, goals, desires, plans, finances, family, everything. It is a very organized, drama free, free bird, SO easy, not complicated relationship. That's the way it should be.

I choose to speak about this on my blog because... well, I do just about everything, for diary, or to relate back to, or to maybe even help someone. I don't know. It's here for a reason, whether I know what that reason be or not.


When church let out last night, we walked to the car, and he held me in his arms. I could hear his heart beat. Beating faster then normal. But I smiled. Neither of us had to say a word, because we were both on the same level. Jerod and I decided together that we were going to put the relationship to rest. We both ended on very well terms, and will still see each other once, twice or three times a week at church in passing. But we did tell each other that we loved one another for the first time,... before we said goodbye.

He's going to be a great husband and father to someone some day.

He is the reason why I trust men again.

So the world has come down on you and you have nothing left to give. You ache in pain but there's no need to forgive. You cry to ask only to take that life away, when someone reaches out and notices you today. That man who says he'll never leave your side, that he'll be everything you want and will always provide. You're asking The Lord please, down on your knees, that there's only one reason you'll want to survive.

So that day when when things started to reappear, is the day the Lord said he'll always be near. The times will be rough but I'm making you stronger, and I promised you and your son you'll never hunger. So now while kneeling down on my knees and my wrists, I pray to the Lord all the things that I can't resist. All the temptations and burdons, sorrows and pains, to know that you're coming back one day.

Lord I know what you said is promised and true, I'll never turn away from you. No matter what things people do or they say, it's your will the only reason why I'm beggin to stay.


I just wrote this this evening. I haven't edited it. I just felt encouraged to write this. I was listening to Lecrae, and had a particular beat in my head when I wrote it, and wrote from my heart. Love Always, Julie.

Getting ready to Celebrate You!!! Here's a mirror pic, lol... =)




I finally got to meet you! How exciting your birth was! I celebrated with 2 glasses of plum wine. The company was great, and as we toasted the New Year, a handsome brown eyed boy distracted my attention away from the bright glowing ball which had dropped... with a kiss. =)




New Years day we planned that we wanted to do something exciting! I've never been on the "Dive Bomber" at Six Flags, so we chose to do just that! The excitment was off the charts! The thrill of it shivered down my spine! I said I wouldn't do this... but because of the company I was with, I felt safe. Protected. So we actually now have plans to go Sky Diving 01-01-11 !!!
